## About this wine

Day Wines was established in 2012 by winemaker Brianne Day in Dundee, Oregon, after extensive travels across 80 global wine regions. Sourced from four organically and biodynamically farmed vineyards across the Willamette Valley AVA, this cuvée showcases low-intervention winemaking and sustainable land stewardship.

## Interesting facts

- Winemaker Brianne Day visited 80 wine regions around the world before founding Day Wines in 2012.
- The four aromatic grape varieties are co-fermented on their skins for three weeks to build tannic structure.
- Sourced from four organic and biodynamic vineyards across Oregon's Willamette Valley.

## Food pairing

The wine's crisp acidity and delicate phenolic tannins slice through rich fatty textures while complementing savory umami, spicy spices, and aromatic herb-driven dishes.

## Wine making process

Grapes were fully destemmed into 1.5-ton open-top fermenters and underwent spontaneous co-fermentation using native yeasts. The wine remained on skins for approximately three weeks until fully dry before being pressed and matured in stainless steel tanks. Lightly fined, filtered, and bottled with minimal added sulfur dioxide.
