## About this wine

Domaine Maire & Fils traces its winemaking history in Arbois back to 1632. Located in the Jura region of eastern France, Arbois was recognized as France's first AOC in 1937. This iconic Vin Jaune is produced from select 'Grandes Parcelles' featuring grey marl soils, planted entirely to the indigenous Savagnin grape variety.

## Interesting facts

- Vin Jaune is uniquely bottled in a 62 cl Clavelin, representing the volume remaining after 6 years of natural barrel evaporation.
- Aged under a yeast veil (sous voile) for over 6 years in un-topped barrels without human intervention.
- Domaine Maire & Fils traces its winemaking roots back to 1632 in Arbois, France's very first AOC.

## Food pairing

The powerful oxidative notes, rich texture, and elevated acidity of Vin Jaune require deeply savory, fatty, and umami-rich foods. Rich cream sauces, earthy mushrooms, and aged hard cheeses harmonize with the wine's distinctive nutty and yeast-derived complex character.

## Wine making process

Harvested late in the season, the Savagnin grapes are directly pressed and vinified dry before undergoing a short fine-lees maturation. The wine is then aged for at least six years and three months in 228-liter oak barrels without topping up. This intentional ullage encourages a protective surface film of yeast ('voile') to form, developing unique oxidative characteristics before bottling in traditional 62 cl Clavelin bottles.
