## About this wine

Karnage is a collaborative négoce venture created in Arbois, Jura, by two natural wine figures: Stéphane Planche, former head sommelier at Maison Jeunet, and Charles Dagand, co-founder of Domaine de l'Octavin. The cuvée 'Zak' is named after the winegrower who organically farmed the Mauzac grapes in Castelreng, near Carcassonne in Southern France. By transporting these Southern grapes to the Jura for vinification, Karnage creates energetic, unadulterated wines that bridge Mediterranean fruit with cool-climate natural winemaking finesse.

## Interesting facts

- Co-founder Charles Dagand previously co-established the iconic Jura natural wine estate Domaine de l'Octavin.
- The wine is named after Zak, the partner winegrower in Castelreng who organically farmed the Mauzac grapes.
- Grapes are grown in the warm Languedoc region near Limoux but transported to Jura for low-intervention vinification.

## Food pairing

The energetic acidity and subtle skin-contact grip of this natural Mauzac make it exceptional with creamy goat cheese, aged Comté, and savory, herb-seasoned poultry or grilled Mediterranean vegetables.

## Wine making process

Hand-harvested from clay-limestone soils in Castelreng, the 100% Mauzac whole bunches were directly pressed upon arrival in Arbois without destemming. Spontaneous fermentation took place over the winter in tanks using only wild yeasts. The wine completed full spontaneous malolactic fermentation and aged on its fine lees without racking. It was bottled unfined, unfiltered, and with zero added sulfites on July 1, 2021.
