## Wine making process

Hand-harvested from old dry-farmed bush vines in the Maule Valley, the grapes undergo a 4-day cold maceration before fermenting with native wild yeasts in stainless steel tanks at controlled temperatures of 23°C to 27°C for 12 to 15 days. Gentle pump-overs aerate and extract delicate fruit flavors and vibrant color. Aged briefly in stainless steel with zero oak contact, the wine is bottled unfined, unfiltered, and without added sulphites.
