## About this wine

Viña Encina Tinto Tempranillo is produced by Elvi Wines, a family-owned project founded by Moisés Cohen Amar and dedicated exclusively to high-quality Kosher wines across Spain's premier appellations. Rather than maintaining a single central winery, Elvi Wines collaborates with expert viticulturists in key regions, including D.O. La Mancha. The grapes are sourced from high-altitude vineyards located roughly 700 meters above sea level on the central Spanish plateau. This everyday, fruit-forward release is certified Kosher for Passover and Mevushal under Orthodox Union supervision.

## Interesting facts

- Elvi Wines specializes exclusively in Kosher Spanish wines in partnership with local growers.
- Vineyards are situated at 700 meters elevation, where cool nights preserve natural acidity.
- Certified Kosher for Passover and Mevushal under Orthodox Union supervision.

## Food pairing

This vibrant, fruit-forward Tempranillo features soft tannins and lively acidity that complement savory white meats, cured charcuterie, and tomato-based dishes. The wine's refreshing acidity cuts through rich pork and sausage, while its gentle structure ensures it does not overpower lighter poultry dishes.

## Wine making process

The winemaking process focuses on retaining fresh primary character through clean stainless steel production. Grapes undergo a cold pre-fermentation maceration to extract rich color without harsh tannins. Fermentation takes place over 10 days in stainless steel tanks at a controlled temperature of 19°C, followed by an additional 8 days of skin contact. Gentle daily pump-overs (remontage) are performed to build texture and volume. The wine is completely unoaked to maintain vibrant varietal purity.
