## About this wine

Vinetti de Fiorini is a Tuscan wine project created by Gustinvest in partnership with consulting oenologist Franco Bernabei, renowned for his winemaking at landmark Tuscan estates. The project focuses on highlighting authentic local Italian varieties. Designated as Chianti Superiore DOCG—a strict sub-classification established in 1996 that accounts for roughly two percent of total Chianti production—the wine comes from higher-density vineyards subjected to lower yield allowances and extended mandatory aging requirements compared to standard Chianti DOCG.

## Interesting facts

- Chianti Superiore DOCG represents only about 2% of total Chianti wine production.
- Consulting winemaker Franco Bernabei strongly champions native Tuscan grapes over international varieties.
- Chianti Superiore rules enforce lower grape yields and higher minimum natural alcohol than standard Chianti.

## Food pairing

The bright acidity and balanced, fine-grained tannins of Sangiovese make it an exceptionally versatile partner for food. High acidity cuts through rich meats and complements acid-driven tomato sauces effortlessly, while moderate tannins harmonize with savory proteins without overwhelming delicate herbal notes.

## Wine making process

Harvesting is completed manually between late September and early October. Winemaking utilizes gentle rolling presses to minimize harsh tannin extraction from grape skins. Fermentation takes place in temperature-controlled stainless steel tanks. The wine matures for a minimum of 12 months in traditional oak casks, including Slavonian oak, barriques, and larger oak vessels, followed by at least 3 months of bottle refinement prior to commercial release.
