## About this wine

La Stoppa is a historic estate located in Rivergaro in the Val Trebbiola region of Emilia-Romagna, Italy, managed by Elena Pantaleoni. The winery spans 58 hectares, with 30 hectares of organically farmed vineyards surrounded by oak forests. Vino del Volta takes its name from Signor Volta, the former sharecropper who cultivated the specific single-vineyard plot Vigna del Volta. The estate focuses on native grape varieties and low-intervention natural winemaking traditions.

## Interesting facts

- Named after Signor Volta, a dedicated sharecropper who farmed this specific single vineyard for decades.
- Grapes undergo natural sun-drying on sheets directly in the vineyard for up to two weeks before pressing.
- Extremely limited production of around 5,000 half-bottles pressed using a traditional manual vertical press.

## Food pairing

The rich sweetness, intense aromatics, and vibrant acidity of this sun-dried passito complement rich, salty blue cheeses and savory foie gras, while harmonizing with fruit-based desserts. Elevated natural acidity ensures the rich pairings remain lively.

## Wine making process

Hand-harvested Malvasia di Candia Aromatica grapes are sun-dried on sheets directly in the vineyard for up to two weeks during the appassimento process. The sun-dried berries are pressed using a traditional manual vertical hydraulic press (torchio). Fermentation occurs spontaneously using indigenous yeasts. The wine ages in used French oak barriques and bottle prior to release, bottled unfined and unfiltered with minimal added sulfur dioxide.
