## About this wine

Vino Potable was launched in 2023 by Colombian-born winemaker Laura Sinisterra in Chile's Itata Valley. Operating as a micro-négociant project, Sinisterra partners directly with local farming families in Pellines who have tended centenarian vines for generations. The project emphasizes fair wages and sustaining traditional rural viticulture while crafting low-intervention wines from dry-farmed, ungrafted ancient vines grown on granitic soils within sight of the Pacific Ocean.

## Interesting facts

- Crafted from 100+ year-old ungrafted bush vines worked entirely by hand and horse.
- The name Vino Potable translates to Drinkable Wine or Wine You Can Trust.
- Produced in micro-quantities of roughly 6,000 bottles annually across all cuvées.

## Food pairing

This fresh, low-tannin red wine thrives when served slightly chilled alongside light meats, charcuterie, or grilled seafood. Its high natural acidity cuts through fat without overpowering delicate ingredients.

## Wine making process

Hand-harvested from 100+ year-old ungrafted bush vines, the País grapes undergo spontaneous fermentation with indigenous yeasts in stainless steel tanks. Winemaking takes place at cold temperatures with a 20-day skin maceration, aiming for soft extraction and maximum freshness. Aged in neutral stainless steel tanks to retain pure fruit characteristics, the wine is bottled unfined and unfiltered with minimal sulfur additions.
