## About this wine

Volare de Flor is a Non-Vintage Chardonnay from Per Se, produced in the Gualtallary region of Mendoza, Argentina. The wine's unique character is shaped by its high-altitude vineyard origins and a distinctive winemaking process involving biological aging under a veil of flor yeast, a practice inspired by the winemaker's family history. Per Se is the collaborative effort of David Bonomi and Edgardo del Popolo, known for their terroir-focused, minimal-intervention approach to winemaking.

## Food pairing

The wine's pronounced acidity and saline notes cut through richness and complement seafood. Its subtle oak influence and complex texture pair well with creamy sauces and savory dishes.

## Wine making process

Volare de Flor is produced using 100% Chardonnay grapes from high-altitude vineyards in Mendoza. Following fermentation in tanks, the wine is aged in used French oak barrels. A defining characteristic of its production is the biological aging process under a veil of flor yeast, managed through a solera system. This technique, inspired by traditional methods, contributes significantly to the wine's final profile. The winemakers at Per Se employ a philosophy of minimal intervention, aiming to showcase the unique expression of the Gualtallary terroir.
