## Interesting facts

- Jean-Yves Bizot holds a PhD in oenology and geology.
- All wines are vinified with 100% whole grape clusters.
- No sulfur dioxide is added at any stage of winemaking or aging.
- Production is minuscule, with only a few thousand bottles made annually across all cuvées.

## Food pairing

The wine's delicate tannins and bright acidity are well-suited to complement lean proteins and cut through richer sauces. Its red fruit and subtle earthy notes can echo or contrast beautifully with a variety of herbs, mushrooms, and fruit-based accompaniments.

## Wine making process

Domaine Bizot employs a highly natural and minimalist winemaking approach. Grapes are fermented with 100% whole clusters using only indigenous yeasts at low temperatures in open wooden vats. No sulfur dioxide is added throughout the entire process, from fermentation to aging. The wine matures in 100% new French oak barrels from Rousseau. Bottling is done by hand, barrel by barrel, without any filtration or fining, ensuring the wine's pristine purity and direct expression of the Vosne-Romanée terroir.
