## Wine making process

The Waipara West Cabernet Franc 2019 was produced from hand-picked grapes harvested in May 2019. Fermentation occurred in two vessels with different yeast strains, and malolactic fermentation was encouraged during a warm primary fermentation. Following fermentation, the wine underwent a long, warm post-ferment maceration. It was then aged in French oak barrels, with 16% new oak in the final blend. The winemaking involved keeping batches separate through racking and returning over winter and spring before blending. The wine was then returned to old oak, followed by racking to tank for two months before being fined and filtered.
