## About this wine

Weingut Wasenhaus was established in Baden by Christoph Wolber and Alexander Götze after training for nearly a decade at prestigious Burgundian domaines, including Domaine de Montille and Pierre Morey. Their philosophy brings Burgundian elegance and artisanal low-intervention winemaking to German Spätburgunder. The Möhlin cuvée is sourced from an exceptional parcel of old vines planted on poor limestone soils in a cool side valley of the Ehrenstetter Ölberg, previously farmed by natural wine icon Henrik Möbitz.

## Interesting facts

- Founded by two winemakers who spent nearly a decade training at premier Burgundian estates.
- The Möhlin vineyard carries historical heritage, previously farmed by natural wine pioneer Henrik Möbitz.
- Crafted using 80% whole clusters and initial carbonic maceration in open oak vats.
- Grown on shallow limestone topsoils in a cool side valley, delivering pronounced limestone salinity.

## Food pairing

High natural acidity and vibrant fine-grained tannins make this cool-climate Pinot Noir ideal for dishes rich in savory complexity or gentle fats. Duck, game, and pork cut through the acid structure, while earthy elements like wild mushrooms and truffles harmonize with the wine's limestone minerality and tertiary savory tones.

## Wine making process

The grapes were entirely hand-harvested and vinified using 80% whole clusters. Fermentation began with a short carbonic maceration followed by spontaneous fermentation with indigenous yeasts in open wooden vats with light manual punch-downs. The wine aged for 18 months in 100% neutral French oak barriques (225L). It was bottled unfined and unfiltered with minimal added sulfur.
