## About this wine

Weingut Wasenhaus was founded in 2016 in Staufen, Baden, by Christoph Wolber and Alexander Götze after studying winemaking in Beaune and working at legendary Burgundian domaines such as Pierre Morey, Leflaive, Comte Armand, and Montille. The Möhlin parcel comes from the Ehrenstetter Ölberg site in Markgräflerland, featuring very shallow, stony limestone-clay soil and a southeastern exposure.

## Interesting facts

- Founded by winemakers trained at prestigious Burgundian estates like Domaine Leflaive and Comte Armand.
- Möhlin comes from the winery's stoniest, poorest limestone plot in Ehrenstetter Ölberg.
- Fermentation uses 67% whole clusters beginning with partial carbonic maceration.

## Food pairing

This cool-climate Pinot Noir pairs exceptionally well with lean meats, game, and earth-driven vegetarian dishes. Its vivid acidity cuts through fat, while its stemmy, savory notes mirror mushrooms and herbal reductions.

## Wine making process

Fermentation is carried out with two-thirds whole clusters, beginning with a partial carbonic maceration before transitioning into traditional open-vat fermentation with gentle punch-downs. The wine ferments spontaneously with ambient yeasts and is aged for 16 months in primarily used French oak barrels. It is bottled unfined and unfiltered with minimal sulfur added at bottling.
