## About this wine

Weingut Wasenhaus was founded by Christoph Wolber and Alexander Götze in Baden, Germany. Having met in Burgundy while training at iconic domaines such as Domaine Leflaive, Pierre Morey, and Comte Armand, the duo brought back a classic Burgundian philosophy to Baden's Markgräflerland region. Wasenhaus has redefined German Spätburgunder by crafting transparent, elegant wines focused on terroir rather than heavy oak extraction.

## Interesting facts

- Founders Christoph Wolber and Alexander Götze met as flatmates in Burgundy while working at top domaines.
- Wasenhaus has spearheaded a modern movement of low-intervention, Burgundian-style Spätburgunder in Baden.
- The wine is bottled unfined and unfiltered with minimal sulfur additions to preserve raw fruit purity.

## Food pairing

This fresh, high-acidity, light-to-medium-bodied Spätburgunder excels alongside savory dishes featuring earthy mushrooms, roasted poultry, or lighter pork cuts. The wine's vibrant red fruit and bright acidity balance richer fat while respecting delicate flavors.

## Wine making process

Harvested manually from sandy and loess parcels, the grapes undergo spontaneous fermentation using native yeasts in open-top wooden and stainless steel vats for 15 to 18 days. Depending on parcel ripeness, grapes are mostly destemmed with partial whole bunches (~25-30%). Aged for 14 to 15 months on fine lees in used French oak barrels (pièces), then bottled unfined and unfiltered with minimal added sulfur.
