## Food pairing

The medium-plus body and savory fruit notes of this Syrah make it a versatile partner for richer dishes. Its balanced acidity can cut through the fat of meats like lamb and duck, while its structure complements the protein. Savory elements in the food can echo the wine's inherent savory fruit profile.

## Wine making process

The Wayfinder Syrah 2022 was produced from hand-harvested and sorted Syrah grapes. Up to 25% whole clusters were included in open-top fermentation tanks, which underwent a 3-day cold soak. Fermentation was initiated with ICV D80 yeast, with twice-daily pump-overs and occasional punch-downs. After two weeks on skins, free-run juice was gravity-drained, and the remaining skins were gently pressed. The wine aged for 10 months in used French oak barriques and puncheons, with malolactic fermentation induced in barrel. It was then racked, assembled in tank, and lightly filtered before bottling.
