## About this wine

Weingut Horst Sauer is located in the heart of the picturesque Franconian village of Escherndorf. Horst Sauer began making wine in 1977 from just 2.5 hectares. Today, alongside his Geisenheim-trained daughter Sandra, they manage 21.5 hectares, building an international reputation as Silvaner and sweet wine legends. Despite the premium focus on Silvaner and Riesling, the Sauers maintain a deep-seated love for Müller-Thurgau, proving that this traditionally mass-produced variety is capable of majestic, terroir-driven complexity when planted in VDP.Erste Lage limestone sites.

## Interesting facts

- Weingut Horst Sauer is certified sustainable under the Fair'n Green organization, practicing environmentally friendly viticulture.
- The Escherndorfer Fürstenberg vineyard is an east-facing slope, preserving cool, elegant, and fresh green aromatics.
- While Müller-Thurgau is often a simple carafe wine, this Erste Lage bottling showcases serious limestone-driven minerality.

## Food pairing

The wine's vibrant acidity and moderate alcohol cut through light fats (like salmon or pork), while its delicate floral and mineral notes beautifully complement fresh seafood and green vegetables without overpowering them.

## Wine making process

The winemaking process is designed to preserve the pure fruit and limestone minerality of the Escherndorfer Fürstenberg site. Grapes are entirely hand-harvested to select only pristine fruit. After gentle pressing, the must undergoes a slow, temperature-controlled spontaneous fermentation in stainless steel tanks. The wine is then aged on its fine lees for approximately four to five months in stainless steel, with absolutely no oak contact, ensuring a clean, vibrant, and terroir-focused expression.
