## Food pairing

The wine's chiseled, high acidity and crystalline salinity slice cleanly through rich seafood fats while complementing delicate herbs, citrus accents, and goat cheese.

## Wine making process

Harvested entirely by hand with rigorous selection, the grapes undergo gentle whole-cluster pressing followed by spontaneous fermentation using indigenous yeasts. The wine is aged for 10 months on full yeast lees in large traditional oak casks (Stückfass) and neutral stainless steel tanks. Winemaking follows minimal intervention principles, bottled unfined with minimal sulfur additions.
