## Wine making process

The creation of Left Coast Estate's White Pinot Noir begins with the careful selection of 100% Pinot Noir grapes. Harvested at a Brix of 23.2, the fruit is immediately pressed at cold temperatures to meticulously limit skin contact and prevent color extraction, a crucial step for a white wine. Fermentation takes place entirely in stainless steel tanks, preserving the wine's inherent freshness. A partial malolactic fermentation (20%) is carried out to introduce a subtle complexity and roundness. Following fermentation, the wine is aged for six months in stainless steel, resting on its lees to develop texture and depth. This meticulous process ensures the wine retains its bright character while showcasing the unique potential of Pinot Noir as a white wine.
