## About this wine

En Cavale was founded in 2017 as a collaboration between wine writer Wolfgang Weber and winemaker Chad Westbrook Hinds. Named after John W. Campbell Jr.’s classic 1938 science fiction novella Who Goes There?, which served as the foundation for John Carpenter's iconic film The Thing, this bottling embraces the spirit of stepping boldly into the unknown. Sourced from organically farmed vineyards in California's East Bay Delta and North Coast, the project reflects a light-handed Mediterranean approach to California winemaking.

## Interesting facts

- Named after the 1938 sci-fi novella 'Who Goes There?', which inspired the movie The Thing.
- The label artwork by Robert van Horne depicts a cosmic desert landscape featuring a prominent eye motif.
- The Sauvignon Blanc portion of the blend is uniquely aged in acacia wood rather than conventional oak barrels.

## Food pairing

The extended skin contact endows this white blend with rich texture and subtle phenolics, allowing it to easily bridge the gap between white and light red food pairings. Its vibrant natural acidity cuts through rich meats like duck and pork, while its complex aromatic profile compliments sweet-and-savory Mediterranean and North African spices.

## Wine making process

Organically grown grapes are harvested early to preserve electric natural acidity. Fermentation occurs spontaneously with native yeasts and no commercial additions. The fruit undergoes approximately 24 days of skin-contact maceration. The Sauvignon Blanc component is matured in new and neutral acacia wood barrels, while Albariño, Fiano, and Vermentino age in neutral French oak barrels and flex tanks prior to blending. The finished wine is bottled unfined and unfiltered with minimal sulfur dioxide.
