## About this wine

Katrin Lautner launched her independent winemaking project in 2021 after completing her oenology studies in Vienna and working with prominent natural wine producers in Burgenland. Leasing 2.5 hectares of organic vineyard plots in Neckenmarkt and renting cellar equipment, she creates authentic, low-intervention wines. 'Wiesenklee' translates to meadow clover, reflecting her custom of naming cuvées after native wild plants growing naturally among her organic vineyards.

## Interesting facts

- Wiesenklee translates to meadow clover, named after wild plants naturally growing in the organic vineyards.
- Winemaker Katrin Lautner owns no estate winery, leasing 2.5 hectares and cellar space for production.
- Features a one-third whole-cluster co-fermentation and zero oenological additives except minimal sulfur.

## Food pairing

This vibrant, low-tannin red with lively acidity pairs effortlessly with light meats, poultry, and mushroom-centric dishes. Its crunchy red fruit and underlying minerality slice through soft fats without overpowering subtler flavors.

## Wine making process

Grapes are hand-harvested from the sandy Queraus vineyard parcel in Haschendorf. Winemaking involves co-fermenting two-thirds destemmed grapes and one-third whole clusters spontaneously with ambient yeasts in stainless steel and neutral vats. The wine undergoes 11 months of aging in large used oak barrels before being bottled unfined and unfiltered, with only a minimal addition of sulfur dioxide.
