## About this wine

Azienda Agricola Cirelli was established in 2003 by Francesco and Michela Cirelli in the rolling hills of Atri, within Italy's Abruzzo region. Francesco, who had no formal background in viticulture, set out to create a self-sustaining, multi-crop organic farm. Today, the 23-hectare estate is a thriving biodynamic ecosystem where vines grow alongside olive groves, fig orchards, and grains. The 'Wines of Anarchy' series was conceived as a playful, rebellious project, featuring eye-catching skull-and-crossbones labels inspired by the founder's love for motorcycles and a desire to bring a sense of fun and accessibility to the often-rigid wine world.

## Interesting facts

- The estate features free-roaming geese that act as natural vineyard helpers, managing weeds and fertilizing the soil.
- The 'Wines of Anarchy' label is a rebellious nod to Guzzista motorcycle culture and the television show Sons of Anarchy.
- This wine uses a hybrid method, refermenting in an autoclave using only natural, unfermented grape must instead of commercial sugar.

## Food pairing

This sparkling rosé thrives on its high acidity and vibrant effervescence, which effortlessly cut through fat and salt. The dry, crisp profile cleanses the palate after rich bites of charcuterie or cheese, while the bright red fruit notes complement simple, savory dishes like pizza or grilled seafood without overpowering them.

## Wine making process

This sparkling rosé is crafted from 100% Montepulciano grapes, hand-harvested early to preserve high natural acidity. The winemaking employs a unique hybrid approach. First, the grapes undergo spontaneous fermentation with indigenous yeasts in temperature-controlled stainless steel tanks. Instead of finishing fermentation in the bottle like a traditional Pét-Nat, a portion of sweet, unfermented organic grape must (kept cold since harvest) is blended back into the dry wine. This prompts a natural secondary fermentation in a pressurized autoclave tank. The wine is aged on its lees for three months before being bottled completely unfined and unfiltered with its natural sediment, sealed under a crown cap.
