## About this wine

Founded by siblings Trent and Kimberly Jackson alongside their father, Jax Vineyards produces artisanal California wines with acclaimed Napa winemaker Kirk Venge. The Y3 series pays tribute to the family heritage, named after the original cattle brand used on their grandparents' Yarrayne Ranch. Sourced from pedigree vineyards spanning Napa Valley and Sonoma County within the North Coast AVA, this bottling delivers regional character and family tradition.

## Interesting facts

- The Y3 brand name originates from the cattle brand used on the Jackson family grandparents' ranch.
- Fermentation is carried out using 100% native yeast in concrete tanks prior to barrel aging.
- The wine is bottled completely unfined and unfiltered to preserve natural texture and character.

## Food pairing

Full-bodied Cabernet Sauvignon with rich tannins and vibrant acidity pairs exceptionally well with high-protein red meats. The proteins soften tannin structure on the palate while the wine's acidity cuts through rich, savory fats and pan reductions.

## Wine making process

Hand-picked grapes undergo gentle processing using a state-of-the-art sorting and destemming system. Whole berries undergo a 15 to 30 day cold skin soak before fermentation in concrete tank fermenters using 100% native, spontaneous yeasts. The wine ages for 18 months in French oak barrels (35% new French oak) from coopers including Boutes, Sylvain, and Taransaud, before being bottled unfined and unfiltered.
