## About this wine

Fabien Jouves established Mas del Périé in Trespoux-Rassiels in 2006, located on the clay-limestone plateau of Cahors in Southwest France. This rebellious cuvée was created in reaction to appellation rules that banned heritage regional grape varieties like Jurançon Noir. Named in homage to Robert De Niro's iconic quote from Taxi Driver, Jouves intentionally declassified the wine to Vin de France to preserve regional ampelographic history and express forgotten native grapes.

## Interesting facts

- Named after Robert De Niro’s line in Taxi Driver as a response to regulators banning ancient heritage grapes.
- Made using Jurançon Noir, an ancient local cross of Malbec and Folle Blanche excluded from AOC Cahors rules.
- The estate operates as a biodynamic polyculture farm with truffle oaks, orchards, and native Gascon black pigs.

## Food pairing

The high natural acidity and bright red fruit profile of this light-bodied red cut effortlessly through rich fats found in duck, pork, and cured meats. Gentle tannins ensure the wine stays refreshingly crisp without overpowering lighter savory bistro dishes.

## Wine making process

Matured on high clay and limestone slopes at 350 meters altitude, 25-year-old vines are harvested entirely by hand. Winemaking relies on spontaneous fermentation with indigenous yeasts using 100% whole clusters. A short seven-day maceration takes place in concrete vats with zero chemical additions, unfined and unfiltered. The wine ages for six months in neutral concrete tanks to retain raw fruit purity and lively energy before bottling with minimal sulfites.
