## About this wine

Weingut Ziereisen is located in Efringen-Kirchen in the Markgräflerland region of Baden, Germany, near the border with France and Switzerland. Hanspeter Ziereisen took over his family's mixed farm in the early 1990s and converted it into a dedicated wine estate. The TS Spätburgunder comes from the Tschuppen vineyard site, where vines planted between 1985 and 2005 grow on Jurassic limestone soils covered with loam and loess. Ziereisen deliberately labels all wines as Landwein Oberrhein to retain independence from traditional regulatory constraints.

## Interesting facts

- Founder Hanspeter Ziereisen was originally trained as a carpenter before taking over the family estate.
- The winery intentionally declassifies its high-tier wines to simple Landwein status to maintain cellar freedom.
- The estate describes its winemaking style as crafting athletic decathletes rather than over-extracted sumo wrestlers.

## Food pairing

The vibrant acidity and silky, fine tannins of this Pinot Noir cut through light-to-medium animal fats without overpowering delicate flavors. Earthy mushroom and herb notes in the food echo the wine's underlying chalky minerality and subtle wood spice, creating a balanced savory complement.

## Wine making process

Hand-harvested Spätburgunder grapes are fully destemmed and undergo a six-week spontaneous fermentation driven by indigenous yeasts in stainless steel vats. The wine matures for 18 to 22 months on fine lees in large neutral wooden casks and used oak barriques. It is bottled unclarified, unfined, and unfiltered with minimal added sulfur to preserve its inherent structure.
